Tofu with Crushed Pineapple

Now that you know how to press tofu (see the tutorial here), how about something yummy to make with it?  Read on to see how to make pineapple tofu – a sweet and refreshing snack with a punch of protein!  This is one of my favorite things to bring to work as part of my lunch or a snack.  I am all about yummy snacks, especially if they can be healthy too.


You will need:

– Pressed tofu (see the tutorial here)

– Can of crushed pineapple

– Bowl and masher (even a fork would work)



Mash up the pressed tofu in the mixing bowl with a fork or masher.



Mix in the crushed pineapple, and you’re done!  You can add in raisins for a little variety.  I like to let the raisins sit in the pineapple tofu mixture for a little while – they start to absorb a little bit of the pineapple juice.  Yum!
