Kale Soup

Kale Soup - yummy, healthy, and easy to make!

With this lovely snow we’re getting, I thought it was the perfect time to whip up a big batch of kale soup.  This soup is the perfect thing to warm you up from the inside!  It also has lots of veggies.  Look at those colors!  And so easy to make!  You can let it simmer all afternoon, and then your house will smell amazing.

 

You will need:

– 2 big bunches of kale

– 1 yellow onion

– 4 sausages (these are fake, vegetarian sausages)

– Frozen vegetables (carrots, corn, green beans)

– Olive oil

– 6 cups vegetable broth (or bullion cubes)

– Seasonings (salt, pepper, Italian seasoning)

First, dice the onion and sauté with 2 tbsps olive oil.  Add seasoning and cook until onions are soft and almost transparent.

Add in frozen vegetables and cut up sausage and stir.

Pour 6 cups of broth into the pot and bring to a boil.

Chop the kale into bite-sized pieces, and put in the pot.  Cook on low heat for at least an hour.  It comes out best if you have time to let it simmer for 2-3 hours. (and it’ll make your kitchen smell incredible!)

That’s it!  How easy is that? If you’re a carb-lover like me, you can serve over rice or pasta, or with bread for dipping. Also, kidney beans work great for added protein!
